Since 2025, the particularly atmospheric and intimate Il Ristorante has been under the direction of Italian Michelin‑starred chef Niko Romito, celebrated for his three‑star restaurant Reale in Castel di Sangro. Romito’s culinary philosophy is a harmonious blend of Italian tradition and Balinese ingredients. With just 24 seats, Il Ristorante offers true fine dining, featuring four‑ and seven‑course degustation menus alongside an à la carte selection. The wine list boasts more than 200 labels, predominantly Italian. Romito was named ‘Best Italian Chef in the World’ by the prestigious Italian guide Identità Golose.

The mixologists at The Bvlgari Bar craft an extensive repertoire of cocktails, ranging from classics with a twist such as Raspberry Bellinis and Oak‑Aged Negronis to distinctive local infusions featuring Balinese ingredients including arak, pandan, and rosella.

The Bvlgari Bar upholds a cherished tradition known as the ‘Sunset Ritual’, a nightly ceremony at dusk featuring traditional Balinese music and the scattering of flowers across the pool. This enchanting ritual is designed to mark the transition into evening with a touch of magic.
