Bai Yun literally means ‘white cloud’, a reference to the steam rising from the hotpot. Hotpot (Chinese: huǒguō) is an age‑old communal dining tradition in which raw ingredients are cooked at the table in a simmering broth.

The origins of hotpot date back to the Zhou dynasty, and over the centuries it has evolved into countless regional styles, each carrying strong social and culinary significance.

L’Atelier by Cyril Kongo is an avant‑garde rooftop lounge and bar on the highest floor of The Apurva Kempinski Bali, where Mediterranean tapas, premium beverages, live entertainment and the artistic signature of graffiti maestro Cyril Kongo come together.

L’Atelier is conceived as an art‑studio lounge, translating the Kongo Lifestyle into interior design, music and gastronomy. The space evokes a high‑end atelier: colourful graffiti accents and contemporary artworks by Cyril Kongo contrast with elegant lounge furnishings and an open layout.

Cyril ‘Kongo’ Phan spent his early childhood in Vietnam until the fall of Saigon in 1975; he later lived for several years in Brazzaville, which inspired his artist name. Kongo transitioned from the street to the gallery and museum world with solo exhibitions and major projects; two of his works were showcased at the Grand Palais in Paris.

Pala Restaurant & Rooftop Bar is the international dining venue of The Apurva Kempinski Bali, open throughout the day. The restaurant offers both indoor and outdoor seating arranged around an expansive pool.

From the open kitchen, a wide variety of dishes is served, ranging from breakfast favourites, sandwiches and salads to pasta, meat and seafood, with a strong emphasis on Indonesian specialities.
